2 pounds green cabbage (approximately 1 head)
1 large carrot, peeled
12 small sweet onions, finely chopped
1/2 cup avocado mayonnaise
1/4 cup sweet pickle relish
1/2 teaspoon salt
Pinch of black pepper
Cut the cabbage into quarters and remove the core. Coarsely grate the cabbage and carrots with a food processor. Combine the remaining ingredients. Mix with cabbage and carrot mixture. Chill at least one hour before serving.
